Back on the Low Carb Train
Dieting SUCKS ASS!!!! Yep that just about says it all. It would be nice if I could eat everything I wanted and looked like a super model. But then you figure in all the unlimited amounts of cocaine, and yada yada yada rail thin super model person with a nasal surgery in their future.
That would not be me. So long story short, back to the low carb diet. Yes I have tried every diet known to man, and this is what works for me. I feel better and the pounds do come off. Hopefully this time I will drink enough water to prevent kidney stones.
Anyway this is an awesome recipe for No Noodle Lasagna. Enjoy!
Low Carb No Noodle Lasagna
2lbs lean ground beef browned in olive oil
1/2 onion diced
1/2-1 bell pepper diced
15-16 ounces ricotta cheese
2 eggs
4 medium zucchini sliced lengthwise
1 pound spinach
garlic, salt, pepper
mushrooms
1 small jar no sugar marinara sauce
5 sliced mushrooms
8oz. mozzarella cheese shredded
Brown meat in olive oil then mix with marinara sauce , set aside.
Cook onions,bell peppers, and mushrooms and set aside.
Brown zucchini slices and drain on paper towel.
Mix ricotta cheese and eggs together in bowl.
Spray 9X13 dish with Pam or olive oil spray
Layer in dish:
1/2 Meat Sauce
1/2 Zucchini
1/2 Ricotta/egg mixture
1/2 onions and mushrooms
1/2 cheese
Repeat mixture
Cook 350 degrees for 35 to 45 mins until brown and bubbly
Enjoy!

Ok, so I have been gone a while. I really can't believe it has been over a year. So to catch up on a few things.

Ok so what am I up to now? Well I am still taking pictures, but I learned that I am NOT a sales person and sometimes hobbies should remain just that! I love photography but the truth be known, I will not be making a living at it. So back to nursing I go. I have the most wonderful job ever. I am working in Interventional Radiology and love every minute of it. Besides the paychecks, I really miss my patients. Life is good. Kate is a Senior, Andrew is happily married, and Justin is in his second go round of pharmedic school and living back at mi casa. Sam, of coarse, is still just as perfect as ever! Excuse me while I stick my finger down my throat. Seriously, how can one person be so perfect?
Whatever, so away we go folks!
